It rains, then it rains some more. Actually, it's very welcome, because we were all beginning to worry about drought. And it means that we can spend a cosy day inside with the radio playing and steam on the windows. 

I wanted the children to help me with some holiday baking. They were enthusiastic at the start, but then disappeared until the cake and biscuits were finished. Ah well, that's fair enough. I made some small packages of sweet things to give to their swimming teacher, and assorted aunts and uncles. 

The apricot balls are a bit of a favourite and they are gluten and dairy free, too. I used this recipe (from years ago on the blog! What a handy catalogue it is.) And the cookies are these ones which are also favourites. I've discovered that if you beat the egg-mixture part of the recipe with an electric beater, the cookies get that shiny crackled texture on the outside. I chopped up a block of extra-dark chocolate to put inside them. I last blogged about them back here in March.

    I was browsing your blog for some holiday ideas the other day and came across your apricot balls recipe 🙂
    I also used up some pepperkake dough that I had frozen to make some biscuits. I made some other things for the teachers too but todays, the last day of school before the break, there is no school due to the snow!! We’ll have to eat it all ourselves-no big deal;)

    Have a wonderful time at the beach… and here is to rainy days. I am loving all the rain at the moment. The garden looks so lush and green, and coupled with the humidity, everything is growing at a crazy pace.

    We don’t get much rain on this side of the world and when it does, usually just makes a muddy mess. I do love a gray, cloudy day with the sound of rain hitting the windowpanes. We just seem to get dust storms. :/ Your holiday baking looks wonderful. I had so many plans of things to make for teachers and didn’t get a thing done. Now we are on winter break so I will have time to make things and get it to them in the New Year. Have a great weekend. Tammy
