Lemons 1

Lemons 2

Lemons 3
I used the wintersweet branches on our mantlepiece as inspiration when designing some new coffee cups. I want to take a few pairs of these with me to Auckland on the weekend for this fair. It's pretty fun to draw over plain ceramic ware- I've been collecting the cream cups for a while on my second-hand shop journeys.

The recipe for the lemon cookies that you see above was found here, and they are yum! I doubled the measure of lemon and reduced the sugar a bit, and was pleased with them. Our lemon tree is looking quite happy these days, so I'm always looking for lemony recipes. I've made lots of lemon cordial and hot drinks, this favourite slice, lemon cakes and muffins. Do you have a favourite way to use lemons?

Oh yum, lemon cookies! I wouldn’t have thought of that actually, but I’m keen to try. Our lemon is some sort of Meyer cross, heaps of flavour and juice but not a lot of acidity, so it suits that kind of recipe. My favourite thing to do with the lemons is to make lemon curd. Our neighbour gave us a few limes in the summer and I tried lemon and lime curd and it was just amazing, the neighbours were pretty enthusiastic about it too! The limes just added a little something that took it out of the ordinary. I can see a few ripe lemons out there now actually – through the pouring rain.

    Lemon Cordial?
    that sounds very refreshing.
My mother has a lemon tree, and my husband is very fond of lemon meriugne pie. I like lemon tea bread with lemon thyme, just a simple tea bread with the lemon thyme and a very lemony sugar glaze.

I just had some lovely homemade lemonade today. It was very hot and humid here so it was the perfect thing.

When I had a lemon tree I made a lot of lemonade. I also squeezed fresh lemon and drizzled olive oil onto my arugula salads.

I love Destitute Gourmet, Sophie Gray’s recipe for lemony slice as follows:
    Lemon Curd Krummeltorte
    2 cups self-raising flour
    1 cup sugar
    100g butter, chopped
    2 eggs
    1 cup lemon curd
    1 tbsp icing sugar
Preheat oven to 180C. Place SR Flour, sugar and butter in a food processor. Run machine until mixture resembles breadcrumbs. add the eggs and pulse to combine.
Press two-thirds of the dough into a greased 23-25cm cake tin
lined with baking paper. Spread the lemon curd over this and crumble the rest of the mixture over the top.
    Bake for 35-40 mins.
Dust with icing sugar before serving

It is seriously good. Not too sweet, really lemony and so good. We also love a whopping big lemon meringue pie in our house. xxx

beautiful cups melissa! I hope they are still at the fair when I get there, I might have to be there early. I’ve got a great lemon slice recipe but it uses 6 eggs so I don’t often make it, but it’s yum. Wish I had a lemon tree.

Those are lovely cups..! You caught them beautifully. ANd I like the idea of lemon biscuits too – I might switch to making some of these today instead of the chocolate ones I was planning on. Or maybe both!

Ooh. Citron presse is amazing. Squeezing lots of lemon into a glass, adding water and sugar to taste. So refreshing! Might be how you make the cordial though, but is one of my favourite summer drinks (without having an actual lemon tree in my garden!) x

    Hi Melissa,
thank you for the great recipe (link)! I never had lemon cookies and never heard of it before. They are entirely uncommon here in Germany. I tried the recipe with only 1/2 cup of sugar and more lemon juice: they are “vorzΓΌglich” (delicious)!
I would like to pay a favourite lemon recipe back for it, but I dont have any: Germans use lemons mostly to flavor beer… πŸ™‚
Have a nice day! Annabel (I’m a regular but silent reader πŸ™‚
